Buffalo Chicken Stuffed Sweet Potato-Whole30, Paleo

Key words: Buffalo chicken, sweet potato, Whole30, Paleo, delicious, simple

Before the Whole30 I never knew how much of a vehicle sweet potatoes would be. Shoot, I barely ate sweet potatoes! Now I use them at any and every chance to stuff them with some sort of meat, sauce and other veggies. If you think this sounds weird... keep scrolling I promise I will change your mind. Whether you are eating Whole30, Paleo or somewhere in your Food Freedom, you need to add these to your rotation.

My favorite version of stuffed sweet potatoes are the Buffalo Chicken version. It is tangy, spicy and creamy with my 10-ingredient ranch dressing. You can always make your own buffalo sauce if you want, but there are so many good ones on the shelves that are all clean ingredients. The New Primal is my personal favorite brand of buffalo sauce, they have mild, medium and hot for you to choose from.

I am all about simple, quick meals that can last you all week, whether it be for lunch or dinner. This meal is one that can last me all week if I want it to, or I can make lots of shredded chicken and use them in other meals throughout the week. Variety and simplicity are key to my weekly meal planning if you can't tell by now! Another way to switch this meal up is by using different variety of sweet potatoes. The white sweet potatoes are my absolute favorite, it is more starchy than the orange ones, but tastes the same. There are also purple ones, which are delicious, too!

1 medium size sweet potato

1 chicken breast

2 Tbsp 10-Ingredient Ranch Dressing

1/4 cup buffalo sauce (I like The New Primal Best)

1 cup water

1. Place chicken breast in Instant Pot with 1 cup water and cook on high pressure for 12-18 minutes depending on size of chicken breast. If chicken breast is frozen, cook for 20 minutes.

2. Wash and wrap sweet potato in paper towel. Poke multiple holes in potato with fork. Microwave for 5-8 minutes, again depending on size of potato. Just be sure it is cooked to fork tender.

3. When chicken is done, shred it. Cut potato in half.

4. Stuff potato with 1 cup shredded chicken. Top with ranch dressing and buffalo sauce to your desired amount. Enjoy!
