Broccoli salad is one of those dishes that can go from really healthy to really unhealthy so quickly. Don't get me wrong, the cheesy, creamy, sugary broccoli salad is delicious, BUT why not get the most out of your side dishes without sacrificing flavor? This is dairy free, sugar free and still has all the flavor of a typical broccoli salad. I promise it will be such a crowd pleaser at your next summer BBQ.
One thing people struggle the most with their food freedom during the summer is all the BBQ's, summer gatherings and delicious food and drinks that tend to constantly be around. On one hand this is what makes summer time so great, but on the other, this can be a scary time if you are practicing your food freedom and don't want to lose control. There are so many unknowns in these situations with foods that you don't have control over. My one tip for these situations is ALWAYS bring a dish that you can turn to if all else fails. This dairy-free broccoli salad is a perfect dish for these exact situations!
2 heads of broccoli
1/2 bag broccoli slaw
1/2 red onion
1 cup red grapes
1/2 cup slivered almonds
1/2 cup avocado mayo
1 Tbsp dijion mustard
2 Tbsp red wine vinegar
1/2 lemon juices
1 tsp garlic powder
1 tsp parsley
1/2 tsp paprika
Salt and pepper
Chop broccoli into small florets into bite size pieces, dice onion into fine chunks, half the grapes.
Combine all other ingredients into mixing bowl and whisk until smooth.
Toss together broccoli, onion, grapes, broccoli slaw and combine with dressing.
Top with slivered almonds.
Cover and leave in fridge until ready to serve or eat right away. If you are not eating it the same day, leave dressing on the side until day of or salad will get soggy.
