Greek “Pasta” Salad- Whole30, Paleo

One of my favorite summer time side dishes is pasta salad. Since cutting out pasta that is something I have really missed. I have discovered Palmini noodles which are noodles made from hearts of palm and I am addicted!

They can be easily made into any noodle dish you like, but this pasta salad is one of my favorites. It is quick and simple with all fresh ingredients. You can bring this to any summer BBQ and it will be a hit. It can be a side dish or add you can add some chicken to make it a full meal. If you are not on a Whole30 and feta works for you, throw that in there too!

You can prep this ahead of time and leave the dressing on the side to eat as a lunch multiple days in a row. Pour dressing over when you are ready to enjoy!




Recipe:


1 green pepper

1 cucumber

1 cup cherry tomatoes

1/2 kalamata olives

1/2 red onion

1 cup spinach

1 can palmini noodles

1 tsp parsley

1 tsp oregano

2 tsp garlic powder

1/2 tsp red pepper flakes

1/4 cup olive oil

1 Tbsp lemon juice

1 Tbsp Dijon mustard (I like The New Primal)

1/4 cup red wine vinegar

Salt and pepper to taste


1. Dice all the veggies into bite size pieces and combine in mixing bowl

2. Rinse and drain can of palmini noodles and add to veggies.

3. Combine spices, lemon juice, mustard, oil and vinegar into a bowl and whisk together.

4. Pour over desired amount of dressing into veggies and enjoy!
